Greetings and welcome to the start of The Pie Academy's 2024 online class season. In this second class of the year we're diving into a hot subject that's gotten a lot of attention in recent years - no-knead bread - and, specifically, no-knead focaccia. If you've always imagined that good homemade bread requires lengthy kneading sessions or an expensive mixer, think again. With little effort and a good dose of patience (for the dough to slowly rise; you can go about your business) you can make the sort of excellent bread that's served in the best Italian restaurants or sold in bakeries.
