HEIRLOOM TOMATO GALETTE

It's tomato season (insert contented sigh here) and everyone is falling in love all over again with their favorite tomato recipes. Around here at The Pie Academy, that means lots of tomato pies, including the tempting and colorful galette we'll be making today. We'll start with a wholesome, whole grain pastry...smear it with our Boursin cheese mixture...then pile on with the best heirloom tomatoes we can find. It's a feast for the eyes and taste buds. While the galette bakes we'll mix up a fresh salad that'll make our galette shine...and we'll delve into the particulars of making the perfect galette crust. See you in class!
