Why is it that we don't hear much about custard pies any more? Are they no longer in fashion? Have they taken a back seat to fancier pies, Instagram darlings like the latest salted caramel this and that? Or is it one of those pies bakers think is a cinch, only to discover there are nuances they wish they would have known about? Whatever the case, custard pie is a classic recipe every pie maker ought to master - that's the gist of this class. We'll come at it from two angles, first preparing an American-style custard pie with a par-baked crust. Then we'll scale things down, flip things around, and prepare individual custard tarts in muffin tins, made with a precooked custard.
