Chess pies have always been some of my favorites. This is perhaps best reflected within the pages of my book, PIE ACADEMY, where you will find no fewer than eight recipes for chess pies.

One of the things I love most about them is that these pies are the byproduct of thrift, developed by home cooks who might have had little more than a stick of butter, some sugar, and a few eggs in the pantry.  

Even when modern cooks fancy them up with bittersweet chocolate, maple syrup, lemon or candied ginger - I plead guilty to all charges; the evidence is spelled out in PIE ACADEMY - these are still simple, down-home pies in the best American tradition.
