The beauty of an intimate event like ours is that we can tailor the instruction to your needs. The curriculum will include many of our most popular sessions and recipes from past Getaways...not to mention others from Ken's pie and baking books. Here's a sampling of  recipes and the sorts of sweet and savory pies we've made in the past. 

Meet Your Pie Getaway Guide

Ken Haedrich - dean of The Pie Academy - has been in love with the kitchen and cooking for almost as far back as he can remember. "I come from a big family and the kitchen was always the center of it all. It's where we did homework after school, where I'd sit with my mom and watch Yankee games while she smoked her one cigarette of the day, where it always smelled delicious and where, apparently, the seeds of a life spent happily in the kitchen were planted."

He remembers fondly one particular family tradition, his mom and dad's pie making on fall weekends. "They'd pile the seven of us into the station wagon - this was before seat belts, mind you - head out into the country and buy a bushelful of apples. Back home, they'd make a pie together, just the two of them. Mom peeled the apples, dad always did the crust, a Crisco crust, and it was outstanding. Best apple pie I ever had."

At age 17, Ken joined the Navy and, unsurprisingly, found himself in the kitchen as often as possible. While his Navy buddies were spending their paychecks on Springsteen albums and expensive stereos, he was buying cookbooks written by his early mentors - James Beard, Julia Child and Marion Cunningham, whom he would later befriend.

Ken moved to New Hampshire after the Navy to take a job as the head cook, only cook, and bottle washer at a home for disadvantaged children. "I loved the job and the work was rewarding, but the pay was miserable, so I started writing cooking articles for magazines to make a little extra."  

That was hundreds of articles, 18 cookbooks, and a Julia Child Cookbook Award ago. Today, Ken spends most days tending to his duties as "dean" of The Pie Academy community - ThePieAcademy.com - making YouTube videos and hosting online baking and cooking classes, ably assisted by his wife and partner, Bev. They look forward to meeting you at the Lowcountry Pie Getaway 2025 in Charleston.
