The perfect cheesecake is a thing of beauty for dessert lovers. Dense, unabashedly creamy, with a perfectly balanced sweet-and-tangy filling, all of it supported by a proud graham cracker crust - man oh man is it good! 

And while cheesecake isn't difficult to make, it's not exactly foolproof, either. With cheesecake, the small things matter, and they add up. When they're done right, you get the perfect slice. When they're not, well, it's a letdown.

Ken Haedrich, dean of The Pie Academy, knows his way around a perfectly baked cheesecake. He ran a small cheesecake business in New Hampshire, baking them for restaurants. And it was cheesecake that helped him win over his wife Bev.

In this class, Ken is going to share everything he's learned in his decades of cheesecake baking, from the best pan, to the importance of ingredient temperature, how to handle - and not handle - your eggs for the best outcome, and so much more.
