- Ken Haedrich, dean of The Pie Academy
Friday, March 19th:
Evening Mixer
Friday 6:30 PM - 7:30ish PM (EST) - Pour your favorite beverage, pull out your laptop, and get ready for a weekend of savory pie baking. Ken will serve as the moderator and host of our pre-Getaway Zoom event. He'll fill you in on any last minute agenda details, interview some of our past Pie Getaway attendees, and introduce our Savory Pie Getaway participants. (If you prefer to remain anonymous, of course that's fine.) We'll set aside time for your questions so you're informed and prepared for the weekend's classes.

"...Ken Haedrich never fails to make me want to run to the kitchen and bake. He has a gift for clearly and patiently explaining the basics, then leading you down a happy trail of variations, new inventions, and delightful departures."
-Amy Traverso, Yankee Magazine food editor, on Ken's new book, PIE ACADEMY
Saturday, March 20th
Quiche and Hand Pies
Saturday Noon - 2:00 (EST) - Anyone can make a pretty good quiche. But to make a truly memorable one from scratch, the kind you might find in a French café? That's another story, and the one we'll devote Saturday morning to. There are a dozen little things that go into the baking of an exceptional quiche - from your choice of pan, the ratio of eggs to cream, the perfect seasonings and, of course, virtually everything about your crust. We'll unpack all of it Saturday morning and proceed to make the best quiche you've ever tasted.
Saturday 5:00 PM - 7:00 PM (EST) - For this session we'll turn our attention to savory hand pies and turnovers, beginning with Cornish pasties, the traditional meat and potato pie. We'll learn how the pastry for pasties and other hand held pies differs from a delicate quiche crust, and explore the ever-changing range of filling possibilities that arrive with each new season.
Saturday's lineup includes:
✳️ The Whole Meal Brunch Quiche
✳️ Roast Tomato, Onion & Creme Fraiche Quiche
✳️ Pretty Traditional Cornish Pasties
✳️ Summer Garden Turnovers
✳️ Lots of tips, tricks, and variations
Sunday, March 21st:
Savory Vegetable Pies and Baker's Round Table
Sunday Noon - 2:00 (EST) - Whether they have one crust or two, scrumptious, savory vegetable pies are cause for celebration any time of year. Unlike quiche, these pies put the emphasis squarely on an assortment of vegetables rather than a rich egg-and-cream custard. We'll discuss plenty of options and variations, then bake a couple of Ken's recent favorites.
Sunday 5:00 PM (EST) - when we're done - By Sunday afternoon you'll have a head full of fresh savory pie knowledge, and a kitchen full of dinner pies, perhaps. Maybe you have a few questions for Ken about the items we've baked. That's what this afternoon's Round Table session is all about. We'll look at any photos you've submitted, and marvel at your handiwork. Finally, we'll close out the weekend, wish our new pie friends a fond farewell, and look forward to receiving our Savory Pie Getaway diplomas.
Sunday's lineup includes:
✳️ Double Crust Potato, Spinach & Dill Pie
✳️ Tomato Slab Pie with Pesto (a favorite from our in-person Getaways)
✳️ Russian Cabbage Pie
✳️ More tips, tricks, and variations
"Building your confidence is Ken Haedrich's key to success."
Chuck Williams, late founder of Williams-Sonoma
In person...or online...Pie Academy Getaways celebrate craft, community, and the joy of home cooking.
For the past eight years, The Pie Academy has hosted what we call Pie Getaways as a way to teach pie making skills and share the love of our craft. Since our first modest-size event in Savannah, Georgia, to our larger, subsequent Getaways in Charleston, South Carolina and Woodstock, Vermont, we have grown into an online community that's now more than 4,000 strong.
Our online Pie Getaways and classes present a unique and affordable opportunity for many more of you to enjoy the Getaway experience from the comfort and safety of home - a chance to sharpen skills, build your confidence, and make some new friends. We sincerely hope you'll join us.
